Recipe File :Easy Stuffed Meatloaf ( and a bonus recipe of Goan Green Masala as well!)


When I shared pictures of this quickie meatloaf  on my Easter Lunch Table, several people wrote in to ask me how to make it. Well, its my own concoction and one of those recipes that you can just throw together and modify as it suits you and your family.
It keeps well in the fridge once it's cooked too. The leftover slices also make great sandwich fillings!

Now on to the recipe,



EASY STUFFED MEATLOAF

Ingredients:
500 gms of minced meat
1 large onion chopped fine or grated
2 tspns of Goan Green Masala*
1 tspn  ground Turmeric
1 tspn ground chilli
 salt to taste
1 large egg
3 tbspns of breadcrumbs
1 tbspn of Worcestershire Sauce

Filling:
4-5 boiled eggs
4-5 slices of ham

Glaze:
BBQ Sauce
Chilli Sauce

Method:

Mix together the first six ingredients and let sit for a couple of hours or even overnight.




Put the meat mixture in a food processor along with the egg,  breadcrumbs and Worcestershire sauce.Then grind down to  a nice smooth-ish paste.



Spread out  the mixture on a pieced of clingfilm and I topped it with the ham slices . You could also add cheese slices or substitute ham with bacon( whatever you like really!)



Arrange the boiled eggs on top.Roll tight and shape. Then gently open and slide into a well oiled loaf pan.



Brush with a mix of BBQ and chilli sauce on top.



Cover tightly with foil and bake at 180 for 20 mins.
Then remove the foil and bake for another 10 till lightly browned on top and juices run clear in pan.
Oven timings and temperatures may differ with different ovens,so check carefully while baking.


Let the meatloaf rest for a bit after taking out with the foil put back on top.
Then slice when nearly cooled and Serve!

The Green Masala is a must keep in every Goan Fridge. It can be used for all sorts of dishes and meats, from fish, chicken to beef. So make a batch and keep in your fridge. A spoon here and there and you can whip up stuff in minutes.

My Green Masala is courtesy my awesome Aunt who keeps me supplied and stocked with all sorts of  perfectly made masalas since my own mum is no more. She makes masalas for sale too so if anyone's interested ,drop me line!

In case you want to give it a shot yourself, here's a recipe, just chuck everything in a mixer and blend to a paste!

GOAN GREEN MASALA

25-30 green chilies
2 1/2  cups fresh coriander (tightly packed)
3 inch ginger
15 garlic cloves
2 teaspoon cumin seeds
2 teaspoon coriander seeds
2  teaspoon peppercorns
2 teaspon cloves
2 x 2 inch cinnamon sticks
1 teaspoon turmeric
1 cup vinegar ( use as needed)
